What to do with left-over Polenta, and left over Salsa Finta? How about an easy breakfast dish that will knock your socks off. The night before we made Polenta for the Braised Short Ribs. There was a little left over, so I put it into a small loaf sized glass container and into the fridge it went. Earlier that day, we made a quick pasta with our Salsa Finta for lunch and of course about two cups were left over, so ... continue reading...
Braised Beef Short Ribs with Polenta
Today I am making the perfect dish for this wet, dreary weather. It's a heart warming, stomach filling favorite, braised beef short ribs over cheesy Polenta. This is a serious recipe so plan to take some time for this meal because the total cooking and prep time is at least 4 hours but believe me, it's well worth it. I have learned this recipe and perfected it over the years. I always look forward to having the time to ... continue reading...
Meet Baci the Poodle
I always have a companion in the kitchen, and I thought that some of you would like to meet him. His name is Baci, (pronounced "Bachi"). Baci is the resident Standard Poodle in the house. Baci got his name after the Baci Perugina chocolates. You see, we first picked out a chocolate colored Standard Poodle pup, but on a return visit to the breeder, my husband took a liking to the black pup. As a family, we had ... continue reading...
Spaghettini with Broccoli
This recipe is so simple, quick and healthy. In this dish you cook the broccoli with the pasta in a small amount of water. It goes against the traditional way of cooking pasta by boiling it, but it works. This recipe works best with rapini, but my rugrats won't eat rapini. Frankly, many adults don't eat rapini either due to it's bitterness, but hey, I like it. I guess it's an acquired taste. Another choice is baby ... continue reading...
Codfish Fritters (Bolinhos de Bacalhau)
Codfish Fritters or Bolinhos de Bacalhau, as they are known in Portuguese, is a dish commonly found in Brazil and Portugal. It's made with dry salted Codfish. You can find salted Codfish at Whole Foods, Bristol Farms and markets that carry South American specialties. I decided to recruit my step-father Carlos, as the guest cook for this recipe. He has made this dish on many occasions, so we decided to make it ... continue reading...
Basil Pesto – Pesto Genovese
I made Basil Pesto for the first time this week and was surprised at how quick and easy it is to make. I don't know why I never tried it sooner. It was so delicious and fresh tasting. I've used it all week. I put it on Gnocchi, tomatoes, sandwiches, Minestrone, you name it. Once you make it yourself, you will never want to eat store bought Pesto again. Take about 20 - 25 good sized basil leaves and rinse ... continue reading...
Pasta Fettuccine with Sausage and Leeks
So, I bought leeks the other day and was left with a few too many stalks. I said to myself, "self" what the heck am I going to make for dinner? I already bought some nice mild Italian sausages. Well, believe it or not, this recipe for Pasta Fettuccine with Sausage and Leeks, comes from Barilla, the pasta company. Everyone in my household enjoyed it. The 5 year old first balked at the leeks in the sauce, but once she ... continue reading...
Umami Burger
If a picture were worth a thousand words, this would be a million. I had lunch today with an old friend, at the famous Umami Burger in Los Angeles. What is Umami? "The Fifth Taste" as they coin the phrase for "Sweet, Salty, Sour and Bitter". Umami itself is a Japanese term for a pleasant savory taste imparted by glutamate, which is a type of amino acid and ribonucleotides, including inosinate and guanylate which ... continue reading...
Vichyssoise
The story of the origin of Vichyssoise goes like this. Chef Louis Diat of the Ritz-Carlton created this soup based on his mother's recipe. He created this soup in 1917 for the opening of the Roof garden restaurant of the Ritz-Carlton in New York City. Chef Diat was searching for recipes for the hot summer weather and remembered his mom's Potato Leek soup. In the summer, his mother would add cold milk to the soup to ... continue reading...
Salsa Finta
This is my simple basic, tomato sauce. It's is lighter than most marinara sauces because you don't use onions or fry the garlic. Salsa Finta translates to "False sauce". In Sicily it was considered false or fake because there is no meat in it. The recipe comes from my great grandmother. This is another quick sauce that can be finished in 20 minutes, tops. It's oh so simple, and oh so good. Kids love ... continue reading...
