If a picture were worth a thousand words, this would be a million. I had lunch today with an old friend, at the famous Umami Burger in Los Angeles. What is Umami? “The Fifth Taste” as they coin the phrase for “Sweet, Salty, Sour and Bitter”. Umami itself is a Japanese term for a pleasant savory taste imparted by glutamate, which is a type of amino acid and ribonucleotides, including inosinate and guanylate which occurs naturally in meats, fish, vegetables and dairy products. The taste Umami is subtle but blends well with other tastes to expand and round out flavors. The Umami people have an almost scientific theory to this as you can see. For me, and most customers it simply tastes fantastic. The setting has the aesthetic is of a Japanese Udon or Sushi house, known for its clean simplicity. The menu too is simple and straight forward but packs quite a wallop full of gourmet and specialty ingredients rarely found on a Burger menu. Chorizo, Manchego, Truffle, Truffle cheese, Blue cheese with Port caramelized onions just to name a few. Put it on your list of places to try out.
