Collard greens cooked Brazilian style make a really nice side dish. In the US, we tend to overcook our greens. This leaves you with wilted brown greens, robbed of their nutrients. Collard greens are high in vitamin C and have anti-cancer properties. This dish is fast to make and oh so tasty.
Ingredients:
A nice bunch of Collard greens, or about 8 oz, cleaned.
4 slices of bacon
4 cloves of garlic, sliced
Olive oil drizzled on top (optional)
Tools needed:
1 frying pan
1 pot to boil water
1 colander
Chop the greens into small pieces
Boil water to blanch the greens
Place cut up greens into salted boiling water and blanch for 2-3 minutes
Meanwhile, take 4 slices of good quality bacon and cut up into small pieces and saute in frying pan till nice and brown
Add the sliced garlic and brown for another 2 minutes, and now add the well-drained, blanched greens.
Saute’ for about 8 minutes and it’s done!

Take your cleaned Collard Greens and cut up into small pieces or strips. Boil a pot of water, big enough to place your greens in. When the water is boiled, salt the water and place the greens into the pot. You are only going to blanch them, not cook them. Blanch for 2-3 minutes at the most. Remove greens and drain in a colander. Take 4 strips of good quality bacon and chop up into small pieces. Brown the bacon until crispy point, and add the 4 cloves of sliced garlic. You can add more garlic if you like. Cook the garlic for about 2 -3 minutes. Now you add the blanched greens. Cook over medium heat for about 8 minutes, and that’s it! If you like, you can drizzle some Olive oil over it.
