Pastry Puff Egg Cups

Ingredients
  • Ready-to-bake Pastry puff sheets
  • 6 large eggs
  • ½ cup grated cheese of choice
  • ½ cup ham, chorizo or cooked sausage
  • Red onion or shallots
  • Spinich
  • Basil
  • Herbs
  • Salt & pepper
Method
  1. Thaw out the Ready-to-bake Pastry puff sheets according to package directions
  2. Lay out the pastry puff dough, and cut the dough in a circle or square, so that it will fit in your muffin cups.
  3. Preheat oven to 350° F.
  4. Spray the muffin pan with a cooking spray
  5. Press the cut dough into each cup, trimming the excess
  6. Place pan into oven for about 5 minutes or until the dough starts to puff
  7. Remove pan from oven
  8. Layer the cups with ingredients of choice
  9. Carefully an egg into each cup, making sure not to break the yolk
  10. Top off with a pinch of cheese, salt and pepper
  11. Bake at 350° F. for 20 - 25 minutes, or until the egg is cooked and the pastry puff is a light golden color
